Thus far, I’m an excellent maker of the bacon. If we ever end up in one of those end-of-the-world movie scenarios where there are limited spots in compounds, my bacon-making skills are going to go to the top spot on my resume. Who doesn’t want to know that they’ll still have an option for BLTs in the middle of the safe-zone in the zombiepocalypse?
Of course, I should recognize there are other bacon-makers out there…and this means finally getting to the rest of the good things to know in Michael Ruhlman’s Charcuterie and the upcoming Salumi.
